When the root mass is in a place where settling or decay would cause a real problem, the right answer is full extraction. We pull the stump and the primary root structure, backfill the cavity properly, and restore grade so the area is stable.
This takes more work than grinding, and we will tell you upfront whether it is necessary or whether grinding is the right call. We are not going to recommend the bigger job if the smaller one will solve the problem.
